The truffle that inspired it all! For years I have been searching for a delicious peach truffle, to no avail. So I decided I would make my own. This proved to be harder than I had anticipated, and thus was the birth of my gourmet artisan business. Peach is a very delicate flavor and doesn't really show up when mixed with chocolate. I still remember how shocked I was when they pour lime juice, chile, and salt all over my fresh mangos in Central America.
